Curry in Hurry

Step 1: Select the sauté button on medium heat in your Instant Pot or Ninja Foodi. If you are using a stovetop pot, heat the pan on medium heat.

Step 2: Add to the pot 1 tablespoon of oil of your choice or ghee. When the oil is hot add the small package of spices inside your kit with 1tsp of salt and gently sauté for 2 minutes. You should feel the wonderful aromas releasing.

Step 3: Quick rinse the lentils under tap water and add to the pot of spices with 1L of water or vegetable broth. Close the pot, put the valve in the sealing position and select “Pressure Cook” on high for 12 minutes. If you are cooking on a stovetop pot, make sure to have medium heat and gently cook it for approximately 25 minutes, or when done to your liking.

Step 4: When the pot beeps and cooking time is over, carefully release the pressure and open the pot. Add 400ml of good coconut milk and you are done!  When your lentils are done on the stovetop method, add the coconut milk and adjust the consistency by adding water if needed.

Important note: For better results do not skip on the coconut milk. This is the luscious finish of your dish.

 

Cashew Cheese Kit- Fermented Option

Step 1: Soak the cashews overnight in a glass container, minimum soaking time of 8 hours. Add enough water to fully cover the cashews

Step 2: Discard the cashew water and rinse them until the water comes clean. Add the cashews to your high-speed blender or food processor. Add to the blender ½ cup of water and open the probiotic capsule by dispensing its content with the cashews, throw the empty silicone capsule in the garbage. Blend the cashews until smooth. When done, put the cream into a glass jar e ferment for 24hours away from sunlight in a good, ventilated room.

Step 3:  You are almost done. Inside your kit, there will be a small package of herbs and spices and a probiotic capsule. Add the small package of spices and herbs to your cashew cream and add 1tsp of lemon juice. Mix well and let it sit for a minimum of 2 hours for the flavours to develop. That is it! Enjoy.

Step 2: Discard the cashew water and rinse them under the water until comes clean. Add the cashews to your high-speed blender or food processor. Add to the blender ½ cup of water and blend the cashews until smooth.

Step 3:  You are almost done. Inside your kit, there will be a small package of herbs, spices, and a probiotic capsule. Add the content of the small package to your cashew cream and add 1tsp of lemon juice, do not add the probiotic because you are not fermenting. Mix well and let it sit for a minimum of 2 hours for the flavours to develop. That is it! Enjoy
